Geocaching-it’s never as good as I expect

Linden got a a geocaching thing for Christmas. For some reason I’m always excited to go geocaching and then we can never quite figure out how to do it so it seems to be somewhat of a bust. Since Linden’s geomate was new and we couldn’t find the directions before we left we really had know idea what we were doing, we ended up using Stefan’s phone. We headed to Guadalupe State Park since it’s so close and luckily all the state parks have pretty easy geocaches which always have treasures in them. Channing pretended to do some navigating with her map. It was a beautiful day to be outside and we enjoyed just hiking around. Even though it was the greatest geocache trip I’m sure we’ll be trying again soon.

The Groupon

I bought a groupon several months ago for skating.  I had decided that Christmas would be a good time to go as long as we could find a sitter for at least the little man.  The kids loved it and to be honest, so did I.  Smile

The Alamo

Hadley is not completely out of his Davy Crockett phase  and we had promised back in the summer that sometime we could go to the Alamo.  With Stefan being off of work this week we thought it was the perfect chance to go.  Unfortunately with the Alamo Bowl this week and the holidays, everyone else thought it was a great time to go too.  We got there around 10 and it was crowded but we didn’t have to wait in line.  By the time we left an hour or so later there was a long line out the door.  We may need to go back again and spend a little more time down there but it was a good quick trip.

Christmas

We started Christmas in San Antonio and ended it in Corpus.  We opened all our presents at home, played with new toys, cleaned up a little, ate lunch and then headed to my parents to be with the entire family.  We had a great day and it seems a little surreal that it’s over.  That’s pretty typical for me though.  All the planning and preparation and just like that the day is gone. A LOT of cinnamon rolls

I’ve been wanting to try the Pioneer Woman’s recipe for cinnamon rolls and we didn’t have plans so I decided Friday morning was a good day.  This recipe made a ton, like 8 pans.  We started with the cutting board and then moved to the table.  The rolls were a hit but we decided we liked them more like orange rolls than with the coffee/maple icing.  Linden and Channing were my helpers.

Ingredients
  • 1 quart Whole Milk
  • 1 cup Vegetable Oil
  • 1 cup Sugar
  • 2 packages Active Dry Yeast, 0.25 Ounce Packets
  • 8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour
  • 1 teaspoon (heaping) Baking Powder
  • 1 teaspoon (scant) Baking Soda
  • 1 Tablespoon (heaping) Salt
  • Plenty Of Melted Butter
  • 2 cups Sugar
  • Generous Sprinkling Of Cinnamon
  • _____
  • MAPLE FROSTING:
  • 1 bag Powdered Sugar
  • 2 teaspoons Maple Flavoring
  • 1/2 cup Milk
  • 1/4 cup Melted Butter
  • 1/4 cup Brewed Coffee
  • 1/8 teaspoon Salt
Preparation Instructions

For the dough, heat the milk, vegetable oil, and sugar in a medium saucepan over medium heat to just below a boil. Set aside and cool to warm. Sprinkle the yeast on top and let it sit on the milk for 1 minute.

Add 8 cups of the flour. Stir until just combined, then cover with a clean kitchen towel, and set aside in a relatively warm place for 1 hour. After 1 hour, remove the towel and add the baking powder, baking soda, salt, and the remaining 1 cup flour. Stir thoroughly to combine. Use the dough right away, or place in a mixing bowl and refrigerate for up to 3 days, punching down the dough if it rises to the top of the bowl. (Note: dough is easier to work with if it’s been chilled for at least an hour or so beforehand.)

Preheat the oven to 375°F.

To assemble the rolls, remove half the dough from the pan/bowl. On a floured baking surface, roll the dough into a large rectangle, about 30 x 10 inches. The dough should be rolled very thin.

To make the filling, pour 3/4 cup to 1 cup of the melted butter over the surface of the dough. Use your fingers to spread the butter evenly. Generously sprinkle half of the ground cinnamon and 1 cup of the sugar over the butter. Don’t be afraid to drizzle on more butter or more sugar! Gooey is the goal.

Now, beginning at the end farthest from you, roll the rectangle tightly towards you. Use both hands and work slowly, being careful to keep the roll tight. Don’t worry if the filling oozes as you work; that just means the rolls are going to be divine. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. When you’re finished, you’ll wind up with one long buttery, cinnamony, sugary, gooey log.

Slip a cutting board underneath the roll and with a sharp knife, make 1/2-inch slices. One “log “will produce 20 to 25 rolls. Pour a couple of teaspoons of melted butter into disposable foil cake pans and swirl to coat. Place the sliced rolls in the pans, being careful not to overcrowd. (Each pan will hold 7 to 9 rolls.)

Repeat the rolling/sugar/butter process with the other half of the dough and more pans. Preheat the oven to 375°F. Cover all the pans with a kitchen towel and set aside to rise on the countertop for at least 20 minutes before baking. Remove the towel and bake for 15 to 18 minutes, until golden brown. Don’t allow the rolls to become overly brown.

While the rolls are baking, make the maple icing: In a large bowl, whisk together the powdered sugar, milk, butter, coffee, and salt. Splash in the maple flavoring. Whisk until very smooth. Taste and add in more maple, sugar, butter, or other ingredients as needed until the icing reaches the desired consistency. The icing should be somewhat thick but still very pourable.

Remove pans from the oven. Immediately drizzle icing over the top. Be sure to get it all around the edges and over the top. As they sit, the rolls will absorb some of the icing’s moisture and flavor. They only get better with time… not that they last for more than a few seconds. Make them for a friend today! It’ll seal the relationship for life. I promise.

Living Room Sleepover

We blew up air mattresses, popped some popcorn and got our Christmas movies lined up.  We (minus Gibson) all slept in the living room Thursday night.  Like anytime you don’t sleep in your bed, you don’t sleep all that well.  To make it worse, we were freezing.  It was beautiful and warm on Thursday so we had turned off the heater but then a cold front blew in and when I woke up Friday morning is was 59 inside.  COLD!  We had a great night though and made some fun memories.  We also found out that Channing dreams of Holden, she was talking to him in her sleep.  c-1331

The suburban express

We printed tickets for the suburban express and headed out to get chocolate chip peppermint milk shakes and look at Christmas lights.  Nobody really wanted to pose for a picture because it was sprinkling and their tickets were getting wet.  Smile

Helpers

I had helpers this year working on Christmas goodies for Stefan’s work and believe it or not, Channing and Gibson really did help unwrapping the Reese’s peanut butter cups to put in the peanut butter cookies.

Of course, let’s be honest, there was sampling going on too, mostly by Stefan, but, Channing and Gibson had their fair share.

Santa (for the 3rd time)

I’m pretty sure this was our third visit with Santa this year and believe it or not, it’s the first time out of all my children that my almost 2 year old did not cry with Santa.  Channing just thought because she was not crying that she was “obeying” me.  She even told a lady in HEB that she was obeying her mommy and not crying when she saw Santa.  Nice.  I’m sure that lady thought I was the best mom ever.c-1141-2

After our quick visit with Santa we went for hot chocolate at McDonalds, Linden then proceeded to spill every bit of it all over my floor.  I’m pretty sure I should still be scrubbing it out of my carpet and not sitting here blogging.

School Program

The boys did great in their Christmas program.  It was a sweet program with Christmas songs and the retelling of the Christmas story along with showing off how the kids know almost all of Romans 12.  We even had a last minute visitor.  Karen decided to come down and she got here just in time for the program.  The boys were thrilled to have someone else to cheer for them.  (Gary came too and we enjoyed a fancy dinner at Whataburger after the program)

Package Day

Family pictures

Finding a time for Sarah to take our pictures was hard this year.  We were busy and just didn’t get around to it before the time change and after the time change pictures have to be taken SO early in the day.  Stefan was a trooper, he came home early from work, put the canoe on top of the car and got dressed so we could go out to a field and take pictures in with the canoe.  Sarah was awesome, chunking things in the air to try and make my grumpy youngest child happy.  We had a lot to choose from!  Here was one of my favorites.  I did promise cupcakes for all children who cooperated.  Unfortunately Gibson didn’t get that memo. Ha!

It’s cold!

Cookie decorating

We made and decorated cookies earlier in December this year and I’m glad. We may have to do that every year.  In the past we’ve decorated the night before Christmas and it’s just too much.  Hadley made this stocking by hand (not with a cookie cutter).  He was pretty proud.  All the kids helped decorating cookies for Stefan’s work this year and I was happy to have the extra help.  I still had to limit the amount of sprinkles Linden put on still, but that’s to be expected with that child.c-0643
